Easy Japanese Chicken Salad

Today, I’m going to share with you and easy Japanese Chicken Salad.   This is one recipe,  I like to make it ahead so it’s ready for a lunch or quick dinner.  I’m all about trying to focus on easy yet healthy lunch or dinner options.   Right now, we are adjusting to the new summer schedules and I’m trying to make time to do those fun summer things like swimming, strawberry picking, festivals, and while trying to work- which can be very challenging!  

Last week, while I was loading up the car for work and Lilly was riding her bike for a quick 5 min she says – I really wish you didn’t have to work and you got a summer break?   Isn’t that the truth!?  While I worked that day I knew I need to save time on cooking dinners so after work we can do some fun things.  I’m hoping with some better weekly meal planning that we can take the time to enjoy Summer instead of it just being another routine.

Easy Japanese Chicken Salad

3-4 Chicken breast cooked and shredded

1 1/2 lettuce – torn

4 green onions + tops (thinly sliced)

1 small bag slivered almonds ( or to taste)

1/4 cup poppy seeds

top off with chow mein noodles

Directions:

Toss ingredients in large bowl

Add dressing when you are ready to serve

 

Salad Dressing

4T sugar

2 tsp. salt

4T vinegar

1/2 c. salad oil

Shake well and pour over salad

 

J salad

Ten on Ten

Well, I’m two days late with this post ……. and behind on a few other posts!  I feel like since the last week in May my life has been in a whirlwind between dance recital, end of the year activities, getting ready for Lilly’s birthday and if that’s not enough I got poison ivy!!!  Which I have never had before and nor do I EVER want it it again!!  I’ve been dealing with this poison Ivy since June 2nd – because on June 1st I did yard work to get ready for Lilly’s birthday party.   In the six years we’ve lived in our house no one has ever got poison ivy!  Well, I’ve learned I’m highly allergic to it and Monday morning I woke up and I told Chris something was wrong and of course he thought I was over reacting until he saw my arms!  Then he said , Aim they might be putting you in the hospital – YIKES!  Are you Serious?  I don’t have time of this crap!!!  OMG – my arms look awful and I’m so thankful right now the weather in Ohio has been on a chilly side that I can still sport a long sleeve top and right now it might be the end of summer you see me in a short sleeve top!   So I’ve learned I’m HIGHLY allergic to poison ivy and my first round of prednisone that will work on normal people didn’t help me one bit and wasn’t enough that my arms swelled up!  Monday, I was back at the doctors and had to get a shot of cortisone and now I’m on a high dose of steroids – Well so much for the 8'lbs I just lost!  It’s so depressing …. uggh!  At the rate my arm looks like now, I might not be running in my race next weekend because seriously, no one will want me to wear a short sleeve shirt! 

 

Well onto my recap of what I’ve been up and hopefully I will start feeling better so I can finish putting all my  posts to together!

Girl Scout Bridging Ceremony Ideas

Last week, we wrapped up 2 years of Daisy Girl Scouts and my daughters troop bridged up to the Girl Scout Brownie level.  The month of May has been extremely busy between juggling Lilly being out of school for two weeks, to planning the Girl Scout Bridging Ceremony, and now we roll into all of the end of the year activities!  I wish I could say I’m excited for summer and a change of pace but that never happens here and looking ahead at the calendar I see no break in sight!

Here is a peek at what we did for the troops bridging ceremony -

Pictured above are terra cotta pots that we painted to represent each Daisy petal – 

The pots will represent our troops Daisy flower garden at the bridging ceremony.

To paint the pots I used acrylic paint and each pot as about 2-3 coats of paint some pots needed 3 coats. 

Once the paint dried I used a clear glaze spray on each pot.

I made a flower for each pot that represent the petal color. 

I used a skewer for the stem and wrapped each skewer in fabric to create the green stem and filled

each pot with a Styrofoam block and green tissue paper

 Each girl was assigned a petal color and they had to memorize what the color represented and

they share this with their parents during the bridging ceremony. 

After each girl said her flower color and what it represents they planted their flower into the pot. 

After all flowers were planted the troop had a completed Daisy Flower Garden. 

Then after each girl got to take home their pot and inside the pot were Daisy seeds to plant at home.

Last fall, I had the girls draw themselves on a cut out – so the paper cut outs represent each girl

and the flowers hanging on the back drop are flowers with each girls name.

Back drop and decorations for bridging ceremony

The rainbow back drop is made up of the plastic party table cloths that you can buy at any party store. 

I’ve been asking for over a year for a photo booth back drop – and finally we made one!  Well my husband made it for me out of PVC pipe. 

I’m excited to see what else I can use it for in the future!

Turn your Children’s Artwork into gifts

This weekend we worked on some gifts for the grandparents.  In April, Lilly invited my Mom and I to her K.I.S.S. Day (Kids Invite Someone Special) to school.   She made us this really cute card but it was one card for both my Mom and I, so I decided to turn it into a gift for my Mom.  I keep seeing popping up in my pinterest stream – turn your kids artwork into  stuffed animal or turn your kids artwork into a tea towel.  So for a gift from Lilly she created several tea towels for the grandparents.   Here’s where I saw the idea for the tea towels – Heather over at Setting for Four has some really cute examples – check it out here

Step 1:  Draw your picture on paper and then insert under the towel and trace your picture.  I let her make a few of her own and she wanted to use the color markers.

Special Instructions – I washed my towels first and ironed them before we started tracing the pictures onto the towels.  After, she traced and colored her drawings on the towels – I washed and ironed the towels again.  This was just make sure everything was set before we wrapped up the towels. 

I hope everyone enjoyed their Mother’s Day and was able to spend the day with the people that matter most!  We had a busy day and I was treated to breakfast and went to dinner …. finished some chores ( a Mother’s job is never done)  hehe!

Ten on Ten ~ A little of what I was up to ……

Ten on Ten project was started over at a little bit of sunshine.   Basically, you are documenting your day in pictures – 10 pictures on the 10th of every month.  We are all so busy these days so one day it’s nice to make yourself focus on what you were doing that one day …..

Coffee …… new creamer flavor this morning.  I’ve really need my coffee this past week …. my patient hasn’t been sleeping through the night and is making for some long days at work this week.

finally ordered our new storm door!  We lost the last one in a winter wind storm …. notice the one light?  The door took off the light and sheared my flag pole right off along with mangling the old storm dorm!  So I’m up early and showered with my coffee waiting for the door installer's to arrive!

My new best friend …… I’m spring cleaning!  All walls, baseboards, floor being washed.  It’s a challenging task … working doesn’t allow me a lot of time to keep up so instead of stressing out I’m taking a couple of rooms each day.  Today, I tackled the stairs and entrance way.  3 rooms down ….. Too many more to go =(

12:30 today she said I’m starving!  So she actually wanted food today!!!  So, we went up to DQ and she  drank her whole slushie and 1/2 hotdog!  Woo Hoo!  The most she has eaten in a week!!

Feeling a little better tonight….. all I heard was clomping coming from upstairs someone was digging in my shoe closet …. I’m glad her energy is coming back!  Forgot, I even had these shoes! haha!  See how much I get out anymore!

1/2 way through her yogurt treat she put her head down ….. her throat hurt too bad to finish.  I feel so bad for her!  She’s been such a trooper but having your tonsils out is no fun!!

I felt bad she didn’t want her ice cream ….  I bought her some menchies pins for her backpack.  That got me a smile!

Homemade Oreo Cookies

Yesterday, while we were waiting at the Doctors office  for a Lilly’s follow up appointment I was scrolling through instagram and stumbled upon a picture of these cookies!  I saw these cookies posted on 733 blogs instagram feed and Lilly was big eye’s “Oh I want those , can we make them”  - Her first question was are the soft cookies – yes, they are soft!  She was pretty excited so we stop at the grocery store for a few items.  She is still on  soft diet as she recovers from having her tonsils out last week.   

We are finding it challenging this week for finding “soft foods” that she’s interested in eating!  At this point she’s lost close to 8 lbs and my daughter didn’t have 5 lbs to lose!  So any calories that we can get into her – I’m willing to do whatever!  So if its cookies – it will be cookies for breakfast, lunch and dinner!

Stenciled Tote Bag

 This week is Teacher Appreciation week at my daughters school.   My original idea for teacher appreciation gifts completely changed because my daughter is still out of school recovering from having her tonsils removed last week. 

I always try to get the teacher something useful instead of something that just become clutter – My mom has taught school for over 23 years and I remember growing up all of the apple coffee mugs that were in our cupboard!  LOTS! 

My original plan was to put something small together each day and send to school – something fun but something to let her teacher know how much she is appreciated!  Can you imagine having 25 six and seven year olds every day!!  Yikes!!

 The tote bag is the perfect size for an every day purse, a tote bag to toss your iPad, nook, or kindle in along with some note pads etc.  Or for a school teacher toss in your papers to grade, your lesson planner and misc. school items!

 The bags caught my eye and I had them in my cart last month but ended up putting them back because I wasn’t sure what I was going to do with them? Other than I thought they were adorable!  Then a few days later this image was in my pinterest stream …. So you know where I went right?  There as my idea and I went back for my bags! 

The Apple Tag on the bag was a free printable form dimple prints.

 


I created my stencil on my cricut using freezer paper and then I stenciled each bag with everyone's first initials.

I think the bags turned out super cute!  I even made one for myself to start – just incase I didn’t like it at least I would be stuck with my initial ;)

This one I made for my mom – my Mom teaches 3rd grade and is also the after school teacher.  Lilly goes to after school almost every day because I work so we also gave Nana a teacher appreciation gift.
